A reason to smile..

When you choose a hobby, make sure it can be a reason to smile as it can help you to reduce your stress and get rid your sadness. Love what you do and you will forget about everything for a while.

As for me, I love to cook. I can try new things and make something new. A new taste. A new recipe. It just like our lives, there are good and bad. In order to improve, you have to accept what others said about your food. After trying for hours in the kitchen and everything turns bad, I learnt that not everything will go as we plan it to be. Continuous practice will help a lot.

A childhood friend of mine is coming home! So excited.. I want to make something special for her. After thinking for night and days, I came out with the blueberry cheesecake. I hope she will love it.

Lets go to the kitchen and start the mission!

  • 200g digestive cookies (crushed)
  • 60g butter
  • 1 1/2 tablespoon powdered gelatin
  • 4 tablespoon water
  • 300g cream cheese
  • 125g castor sugar
  • 125ml whipping cream
  • 350g fresh blueberries or pureed

  1. Grease a 20-21 cm spring form pan. Put crushed biscuits in a mixing bowl. Pour in melted butter and stir well with a metal spoon until evenly mixed.
  2. Press the biscuit crust on to the base of the spring form pan with the back of a metal spoon.Flatten and smoothen the biscuit base all around. Chill in the refrigerator while you prepare the filling.
  3. Beat the cream cheese until smooth. Gradually add sugar and continue beating until light and fluffy.
  4. Sprinkle the gelatine over water.Set aside until it turns spongy. Place bowl over hot water until the liquid turns clear.
  5. Add dissolved gelatine mixture to blueberry puree. Whip up whipping cream until soft peaks form. Add blueberry puree to cream and set aside.
  6. Combine blueberry mixture with cream cheese mixture and smoothen the top with a spatula. Chill overnight until firm.

Already done! It looks tasty!

Red Velvet Cupcake

I love red velvet cake so much. It looks so sexy in its reddish colour and cream cheese toppings.
A little history of the red velvet..
The place of its origin is United States. It is traditionally prepared as a layer cake topped with cream cheese icing, and sometimes cookie dough filing. The reddish colour is achieved by adding red food colouring.

For cakes

  • 320 g castor sugar
  • 5 g salt
  • 2 eggs
  • 300 g wheat flour
  • 15 g cocoa powder
  • 6 g baking powder
  • 230 ml fresh milk
  • 1 tea spoon vanilla essence
  • 3 table spoon red colour
  • 1 1/2 tea spoon vinegar
  • 6 g soda bicarbonate
For toppings
  • 250 g cream cheese
  • 125 g butter
  • 120 g icing sugar
  • 1/2 tea spoon lemon juice

How the make the cake?
  1. Firstly, beat the butter, sugar and salt in the mixture until it smooth.
  2. Then, add the eggs one by one and continue beating it.
  3. Mix all the dry ingredients (flour, cocoa powder, baking powder) in the bowl.
  4. After that, in another bowl, mix all wet ingredients (red colour, vanilla essence, fresh milk).
  5. Gradually add the dry ingredients and wet ingredients one after another and continue beating until smooth.
  6. Before you stop beating, add the vinegar and the soda bicarbonate. Beat for another 5 minutes.
  7. Pre-heat the oven at 200 degrees. Pour the mixture to the cake tin and bake it for 30 minutes.

How to make the toppings?
  1. Mix all the ingredients in the mixture bowl and beat it until smooth and fluffy.
